Keema aloo (curried lamb)


Hello everyone!
Today, a recipe a little special, anything sweet for once.
But a world of flavors, a curry easy to prepare and very tasty!
This recipe will go to Paris!
do not know if you've heard of the "salon of culinary blog?"
Well, I was invited to Paris (Soissons) for this review.
We have been invited to several greedy (for them it is public)
and we will prepare a recipe in 50 minutes at most.

The problem is the time to find a good recipe and possibly interesting
, and be sure not to make a fool of and ratarla!
Shy as they are with strangers, and my French ...
will laugh!


Well, coming back to the salon, I chose two recipes: a cake with dried plums
,
delicious (I've already posted here),
... and this: "Keema aloo" a lamb curry.

Of course everyone can come and see this show.
This year the entries are closed, but next year,
could participate too.

Although I admit, that is the longish road!
It aprofitterò to do some "commissions" in Paris,
which is a city I adore.

Tornanodo the recipe, I recommend it.
If you like curry, one made by hand, not the pale yellow mixture
already made,
you try it!

It's really easy, then I made it even easier ...!

Here are the ingredients:
for 4 p. :
1 cc = 1 teaspoon

  • cicchiaio vegetable oil 1
  • 4 cardamom seeds 1 cinnamon stick
  • 3 cloves 2 onions
  • chopped
  • 380-400 g lamb, cubed
  • 2 cc of garam masala (spice mix)
  • 2 cc of chili powder (I put small pieces of cayenne AVAV fact that dry)
  • 2 cloves crushed garlic (or garlic cream Thai)
  • 2 cc of fresh ginger, grated
  • 2 cc of salt
  • 200 grams of potatoes (sweet potatoes for me)
  • 200 grams of chopped tomatoes (I got here a bit of sauce ' angry)
  • 1 dl hot
  • A bunch of fresh cilantro, coarsely chopped

Heat up the oil in a pan, put the cardamom, cinnamon, cloves
and cook a few minutes.

Add the chopped onions and let another 3 -4 minutes.
United poi l’agnello a cubetti, il garam masala, il peperoncino, lo zenzero e il sale.
Mescolate bene il tutto e lasciate cuocere 5 -7 minuti.

A questo punto, unite le patate tagliate a cubetti (non troppo piccoli),
il pomodoro, e l’acqua calda. Coprite e lasciate ancora cuocere una decina di minuti.

Se volete, e li trovate, togliete la cannella e i chiodi di garofano.
Infine, quando carne e patate sono cotte, unite il coriandolo fresco tagliato .
Non dimenticate di assaggiare prima di servire!
Una cosa che, ogni tanto, dimentico anch’io.
Ed è proprio quella volta che si dimentica il sale, o si è fatto uno sbaglio!

Variante:
potete usare del manzo, unire dei piselli freschi (buonissimi adesso),
dei giovani spinaci ...


Servire con riso e/o pane orientale.

Ecco fatto.Come vedete è una ricetta facile. Bisogna solo seguire la cottura

Il garam masala è una mistura di spezie tipica della cucina indiana e pakistana:
il significato del nome è spezia calda, bollente, anche nel senso di piccante.

Viene preparato tostando, macinando e miscelando alcune spezie tra cui la cannella
, i semi di cumino, il coriandolo, i baccelli di cardamomo, i chiodi di garofano,
i grani di pepe nero e la curcuma, ma ne esistono molte varianti, sia tradizionali
che commerciali o casalinghe.

Quelle già pronte possono essere composte da ingredienti più o meno costosi,
ad esempio peperoncini, aglio, polvere di ginepro, sesamo, semi di mostarda,
finocchio e altri, molto spesso anche già tostati. Questo particolare, però,
non ne aiuta la conservazione, anzi, la preparazione siffatta può perdere il
suo aroma più rapidamente che quella domestica.

Le spezie intere, che si mantengono fresche più a lungo nel tempo,
possono venire macinate nel momento del bisogno con un mortaio o un
qualsiasi macinino,
anche elettrico.
(comunque oggi, ci sono dei garam masala molto buoni).
